One of the three main options you have after winning an attack is to "Leave" your opponent.
Leaving will provide you with the most level experience, although it is unknown exactly how much experience you gain and exactly how it compares to the other options. Leaving and Hospitalizing will also provide the most respect, if you are in a Faction, compared with Mugging which provides 75% of this.
Leaving an opponent will put them in hospital for the least amount of time; with no perks this is between 15 - 30 minutes.
Other options specific to Missions, such as "Kiss" or "Interrogate", resemble Leaving in terms of the experience and respect gained, as well as the hospital time applied.
